Summer black truffle (tuber aestivum Vitt.)

Among the truffle species, it is the most widespread. Its unmistakable scent is sweet, pleasant; the taste: delicate.

Net weight: the average size varies from a walnut to just over an orange. However, they are not rare specimens that reach the kilo.

Storage: in the refrigerator in a hermetically sealed container.

Ideal: appetizers, first courses, main courses of meat or fish, eggs, filling for artisanal pasta or an ingredient for pizza dough, focaccia, wraps and dry pasta.

Pairings: Excellent in slices or minced in first courses and for fried eggs.
The most creative in the kitchen can use it in the filling of ravioli or tortelloni with ricotta or sweet cheeses. Ideal for preparing truffle-flavored pizza.
